Compared to his first restaurant, Eating House, Giorgio Rapicavoli's foray into Spanish tapas in the fast-rising Miami Modern neighborhood could be called boring, but that's the point. At Taperia Raca, Rapicavoli says, the focus is on the classic drinks and light bites of Spain. Pitchers of calimocho, a mix of red wine and Coca-Cola, accompany classics such as croquetas de manchego, gambas al ajillo, and tortilla española. The challenge here is meeting the expectations of his legion of Eating House fans while also producing topnotch dishes that will be compared to ones that patrons have spent a lifetime eating.
