Miami folks in 2007 are in the same place New Yorkers were in ’84: hungering for the clean, complex flavors that characterize real Mexican cooking. Just like back then, Rosa Mexicano comes through for its new hometown. The spicily colored dining room is stylish but has a franchised feel that doesn’t evoke Mexico any more than P.F. Chang’s channels China. However, the rapturous flavors and aromas of the food -- especially sauces -- are more than capable of transporting diners south of the border. Take the tacos de carne asada, juicy red strips of grilled skirt steak atop melted Chihuahua cheese in a hot cast-iron skillet, served with soft corn tortillas; red bean-chorizo chili; buttery corn esquites; refried black beans; rice greened with fresh cilantro; sizzling, smoky pasilla de Oaxaca salsa; chili de arbol salsa; and green tomatillo salsa heated with herbaceous habanero. The price for all of this food, $16.50, leaves enough change to spring for Rosa’s tartly refreshing pomegranate margarita. Another winner: chicken enchiladitas with chorizo sausage, meaty red beans, and astonishingly good mole de Xico sauce prepared with roasted ancho, mulato, and pasilla chilies, and intimations of hazelnuts, pine nuts, raisins, plantains, chocolate, and spices. Oh, we could go on describing the tableside guacamole mashed in a lava molcajete, butterflied red snapper brushed with guajillo chili, a kick-ass Yucatecan cochinita pibil ... but it’s best you just go there and see how good, and surprisingly affordable, it is for yourself. Call for reservations -- the word is already out.
