Located in the Delano's chic, club-like lobby, the old Blue Sea is now Umi Sushi & Sake Bar. Don't worry, though, old faves like the FDR roll (tuna, salmon, yellowtail, and crab in soy paper) and the über-posh Delano roll (poached lobster, Wagyu beef, and black truffle) are still on the menu.
