When it came time for Mathieu Massa and Michael Ridard to name their inviting, gold-splashed Brickell bistro, they could think of no one other than Massa's sister Marion. The three grew up together in southern France, which, along with the rest of the Mediterranean rim, inspired the menu here. The fare is turned out by a copper-clad kitchen that also boasts a bakery producing about a half-dozen varieties of bread every day. The centerpiece of it all is a hulking rotisserie where birds from Murray's Chicken take an hour-and-a-half twirl to develop a crisp skin without sacrificing any of their juiciness. And despite its classic footing, the kitchen, in the hands of Michelin-star-pedigreed Jean Paul Lourdes, deploys a few modernist techniques. Sous vide cooking and the sugar substitute isomalt transform a dry-aged strip steak and a bittersweet chocolate terrine, respectively, into otherworldly pleasures. Just be sure to bring your wallet. Marion won't let you off for a bargain.
