Peruvian culinary ambassador Gastón Acurio's Miami outpost at the chic Mandarin Oriental on Brickell Key takes the humble cevicherias of Lima and merges them with the elegance of fine dining and the bold flavors that have emerged as a result of Japanese migration to the mountainous nation on South America's Pacific coast. Helmed by Acurio protégé Diego Oka, with posts around the globe under his belt, the menu elevates Peruvian classics such as causas and grilled, skewered meats called anticuchos to new heights of refinement that make even the most squeamish first-timers swoon.
