Philippe Ruiz's fare at the Biltmore's lesser recognized 1200 Restaurant consists of more simple melodies than those found at the signature La Palme d'Or. The emphasis here is on fine-tuning Italian staples that have been passed from generation to generation: bruschetta, lasagna, chicken with sausages, and broccollini. It's common Italian/Mediterranean fare that's handled with an uncommon finesse. Take the tchinas appetizer, a papery phyllo crêpe rolled blintz-style around creamy ricotta flecked with coriander and sun-dried tomato, the cheese slowly flowing out like lava onto a pile of perkily dressed arugula leaves. Caesar salad is peppy as well, and a tomato-based, Tuscan-style red bean soup is robustly fortified with Italian sausage and fresh basil. � la carte meats and seafoods are char-grilled or roasted in the wood-burning oven, the selections including New York strip, filet mignon, Florida grouper, Scottish salmon, and succulent sea scallops as munificent as marshmallows. Specialty entrées include veal osso bucco with risotto; baby lamb chops with an olive potato purée and spinach; and a fleshy white square of halibut with a Mediterranean medley of tomatoes, fennel, black olives, and fingerling potatoes. (Incidentally, all nonsteak entrées cost less than $30, which ain't bad for the Biltmore.)
