Sustain Restaurant & Bar invited us to preview its entire Miami Spice dinner menu, which is offered Sunday to Thursday evenings at $35 per person. Sustain also offers a Spice lunch menu for $22 (offered Monday to Friday). Short Order's own Lee Klein gave Sustain's Spice menu a "good" rating last week.
The menu may be short, but it's sweet with just enough choices to leave everyone at the table happy and sated. For example, a choice of salad, corned pork belly or big eye tuna crudo allow a group of friends with different palates (and dietary restrictions) to dine in peace and harmony. The same goes for entrees, of which diners choose between beefy pasta, snapper or fried chicken with Korean flavors.
Options for dessert include a chocolate fondant, fruit cobbler (we had strawberry) and ice cream or sorbet (fresh mango sorbet was our choice).
As with Sustain's regular menu, ingredients are locally sourced whenever possible, so menu items are subject to change or "tweaking".

The Atlantic pole-line big eye tuna crudo with compressed melon salad and micro greens was a colorful starter and a perfect choice for a balmy Miami night.Ricotta cavatelli with Harris Ranch braised short rib, basically an adult version of macaroni and beef, was like mom's cooking -- if mom were a chef and used all locally-sourced ingredients.
Local pan roasted snapper was tender with a crispy skin. Served with fingerling potatoes, pickled pearl onions and charmoula. Make sure to skewer the onions with a steady hand!
Tanglewood Farms Koreatown fried chicken gives off a radiant glow from exotic chili peppers and vinegars. Served with sweet potato fries.
