Aqualina Resort and Spa in Sunny Isles Beach has just tapped one of Miami's best-loved chefs to head its culinary team.

Dewey LoSasso has been named Acqualina's executive chef and will oversee all food and beverage operations, including banquet and event menus, Piazzetta Marketplace & Restaurant, Costa Grill, and creating dishes for the Acqualina Spa by ESPA.

LoSasso, who was conamed Miami New Times' Best Chef in 2010, comes to Acqualina from the Forge. LoSasso, who started at the iconic Miami Beach restaurant in 2008, tells Short Order that although he loved his tenure at the Forge, it was simply time for a change.

The chef plans to take a few months to roll out some new menus at the luxury resort that has earned both the 2013 Forbes Travel Guide Five Star Award and the 2013 AAA Five Diamond Award. "Right now I'm doing some research, and then we'll start testing some menu items after Christmas and New Year's. I'm thinking, maybe, Hamptons-meets-Miami."

LoSasso is excited about his new venture. "There's a great team at Acqualina that I look forward to working with. There's such a wonderful infrastructure -- not many resorts have this much oceanfront square footage."

And the best part of all for the chef? "Just walking outside and looking at the ocean. It doesn't get any better than this."
