On Friday, we spoke with Bourbon Steak Miami's executive chef Gabriel Fenton about his fiery jerk chicken wings that will hit the Bourbon Steak bar bites menu tomorrow -- coinciding with the first Miami Heat preseason game. Some heat with the Heat, so to speak.
The folks at Bourbon encourage you to head to their bar and watch the game on a flat screen TV while eating those wings -- or burgers, whatever. Not a bad idea. But if you'd rather stay at home for this one, Fenton's recipe for the wings follows the jump.
Gabriel Fenton's Jerk Chicken Wings
1 Ginger root, peeled and rough chopped
1 bunch Thyme
2 Tbs. Jamaican allspice or regular allspice
2 Tbs. Black pepper
1 Cinnamon stick
4 Cloves
1 bunch Cilantro
3 c. Soy Sauce
1 C. Vegetable oil
1/4 c. Worcestershire
6 Scotch Bonnet Peppers, rough chopped, stemmed, but leave seeds
100 chicken wings
Place all ingredients in a blender and puree. Marinate the wings overnight in the refrigerator. Bake them with generous amounts of sauce at 300 F for 30 minutes or until falling off the bone.
