From noon to 2 p.m., you can sip Champagne de Castellane Brut Rosé while DaSilva prepares whitewater clams with chorizo and cilantro in aji amarillo broth and seared beef tenderloin with sautéed spinach, stuffed onion gratin, and Cabernet sauce.
