There Will Be Blood

Beer is good. Pork is better. Together they’re awesome. There’s only one thing that could make the pair even more awesome: a butchery class. Monday at 8 p.m., 8 oz. Burger Bar (14815 Biscayne Blvd., North Miami Beach) and Stone Brewing Company will host a beer and butchery pairing — a monthly pairing dinner series complete with a lesson in slicing and dicing domestic flesh. (Several PETA members probably just hyperventilated after reading that. Sorry, we’re not sorry.) The inaugural pairing will focus on pork and beer, with a three-course dinner and hog butchery demonstration. Attendees can expect a half hog caught in the Everglades the week of the dinner, knives glistening with pork fat, handsaws, and explanations of the importance of temperature control, sanitation, and so on. The cost is $75 per person, which sounds a little steep, but where else can you get a lesson on how to butcher a pig?
